Being a vegan, a lot of people ask me, "Well what do you eat then?"
They don't seem to be able to understand that there are other things out there to eat besides meat.
So, every Sunday, I'm going to share my favourite recipe of the week with you!
This week? Salad and Stir Fry!
Jemma's Summer Salad
This is my own recipe, and is basically all of my favourite things mixed together and served! Leave out things you don't like and add in things you do, but the basic recipe requires:
- Cous Cous (cooked and cooled)
- Mushrooms
- Tomato
- Cucumber
- Celery
- Red, green and yellow peppers
- Green and black olives
- Lemon dressing
- Mixed herbs
- Wholemeal bread
- Vegan butter
- Houmous
Step 1: Cook cous cous according to packet instructions (usually steep in boiling water for 5-10 minutes)
Step 2: While the cous cous is cooling, slice the bread and butter each side then spread thickly with houmous.
Step 3: Chop the mushrooms, tomato, cucumber, celery and peppers into cubes and stir into the cous cous.
Step 4: Drain and quarter the olives and mix in.
Step 5: Prepare a simple lemon dressing using juice, or buy a pre-made version (Asda do a lovely one for 40p) and drizzle over salad liberally.
Step 5: Crush mixed herbs between fingers and sprinkle into bowl with salad.
Step 6: Stir everything thoroughly to make sure everything is well mixed then spoon onto houmous spread bread and enjoy!
(Best eaten with cutlery as this can get messy!)

Jerry's Sunday Stir Fry!
We usually have this for Sunday tea as I can't stand "roast" dinners with gravy!
You will need:
- Beansprouts
- Mushrooms
- Red onion
- Broccoli
- Carrot
- Red, green and yellow peppers
- Cashew nuts
- Courgette
- Soy Sauce
- Oil
- Garlic
Step 1: Slice all of the vegetables into thin strips. It's best to use fresh vegetables rather than prepackaged stuff, and although it can be time consuming slicing everything up, a julienne cutter will make light work of the job.
Step 2: Heat oil in a wok and add in all vegetables and beansprouts, heat through until almost cooked.
Step 3: Just before serving, mix in garlic and cashew nuts (be careful not to burn these) and cook for a few minutes more.
Step 4: Stir in Soy Sauce to taste and serve.
Tonight, I had Stir Fry with 2 Linda McCartney Sausage Rolls, whereas Dad had his with a Spicy Bean Burger.
A word of warning, put any accompaniment on a separate plate or the sauce from the stir fry will make it soggy!
